The Texas Roadhouse down the street proudly advertises fall-off-the-bone ribs. When I worked at Farlo’s Smokepit in Austin, if I had served you anything that fell off the bone before it entered your mouth, I would have been fired! The truth is, it’s hard to find good, authentic Texas-style barbecue here in New England. (I can tell you one thing—it’s not at Texas Roadhouse!) This was an urgent issue that needed to be addressed immediately, so my husband and I started SmokeZone Barbecue here in Springfield.

Wondering what exactly we mean by “Texas-style” barbecue? If you are, you’ll probably be surprised to learn that there are multiple styles of barbecue that originate from the Lone Star State. Here at SmokeZone, we specialize in Central Texas-style, where an emphasis is put on simplicity and the flavor of the meat itself. All of our meats are seasoned with just two ingredients—good old salt and pepper—and then placed on our hand-made firepit and cooked to perfection. The result isn’t sloppy and “fall off the bone,” but juicy, smokey, and just firm enough to give you the satisfaction of pulling it off the bone yourself. That’s the sign of good barbecue!
